Description:
For about 2 dozen warm-from-the-oven muffins, combine our kit contents(hearty dry mix of wheat bran and whole wheat flour, applesauce and honey) with water, oil and eggs. High in fiber and vitamins.
Ingredients:
Dry mix ingredients: whole wheat pastry flour, wheat bran, buttermilk powder, wheat germ, baking soda, spices, salt.
Wet ingredients: apples.
Sweetener: 100% pure Grade A honey.

You'll need: 2 eggs, 1/2 cup vegetable oil, 1 1/2 cups warm water, the jar of apple blend, the two honey packets (1/2 cup each), and the ingredients in the dry mix bag. (1/2 cup raisins optional.)
Preheat oven to 375 degrees (350 at higher elevations). Spray muffin pan with cooking spray or line with paper muffin cups.
Pour dry mix into large bowl. In smaller bowl mix apple blend, honey, eggs, vegetable oil and water. Add wet mix to dry mix and blend well. Add 1/2 cup raisins if desired.
Fill muffin cups nearly full with batter. Bake for 15 to 18 minutes, until muffins turn golden or are firm to the touch.
Makes about 24 muffins.
About Our Honey
Buckboard uses 100% pure honey -- we add no chemicals or sugars. The enclosed honey packet may therefore show signs of crystallization, a natural process that can occur when glucose in the honey crystallizes. Crystallization, cloudiness or hardening are not harmful and do not mean the honey has gone bad; they just mean that the honey packet probably got cold somewhere between us and you.
If the honey seems difficult to pour, warm it slightly by immersing the packet in a cup of hot tap water for a few minutes before adding it to your mix. The flavor will be just as good!
